I love soups and sometimes do feel my meal is not complete without soup and for sure soup will be the first dish that I cook every time I back from the trip.
I went to the market this morning and saw the winter melon is very fresh and decided to cook my Winter Melon With Chicken Soup today.
Winter Melon 冬瓜 is cool in nature, it is rich in Vitamin C and is effective in promoting diuresis and expels heat in the body.
I added in some Red Dates 红枣 and Honey Dates 蜜枣 to enhance the soup flavour, Honey Dates helps to improve the appetite and also enhances human immunity.
This soup may consume frequently especially in our hot country, it is nourishing, helps to relieve thirst, promotes diuresis and expels heat.
Ingredients :
1. Winter Melon 500g (NW) without skin and seeds, cut into small pieces
2. Skinless Village Chicken 450g - cut into small pieces
3. 12pcs (20g) Red Dates
4. 2pcs (40g) Honey Dates
5. Water 1,500ml
Method :
1. Boil water in a claypot or any types of pot.
2. Put in all the ingredients once water is boiled.
3. Turn to low heat to cook for 3 hours, done.
4. Salt to taste but optional.
